Zucchini Quiche

Quiche is a comforting French classic that can be served any time of day. This simple zucchini variation transforms a few basic pantry staples into delectable lunch or dinner fare.

Ingredients

  • 1 cup biscuit baking mix
  • 1/3 cup grated Parmesan cheese 
  • 1 teaspoon dried oregano
  • 1 teaspoon seasoning salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 4 eggs, beaten 
  • 1/2 cup grated onion
  • 1/3 cup vegetable oil
  • 1 zucchini, sliced into rounds

Cooking Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch casserole dish.
  2. In a large bowl combine biscuit mix, Parmesan cheese, oregano, seasoning salt, parsley, garlic powder and salt. Stir in eggs, onion and oil. Mix well and add zucchini. Pour into prepared casserole dish.
  3. Bake in preheated oven for 30 to 35 minutes, or until cooked through and golden brown. Let cool for 5 minutes before slicing.
