Sensational Shrimp Kabobs

This recipe for Sensational Shrimp Kabobs makes enough for six adult appetizers -- or four adults and a few kids who like shrimp!

Ingredients

  • 1 lb (500 g) frozen or fresh peeled tiger shrimps (about 36 shrimps)
  • 1 tbsp (15 mL) olive oil
  • 3 tbsp (45 mL) chili sauce
  • 1 tsp (5 mL) finely chopped garlic
  • 1/4 tsp (1 mL) chili powder
  • 1/4 tsp (1 mL) lemon pepper (or 1/2 tsp./ 3 mL lemon zest and a pinch of pepper)
  • pinch of salt

Cooking Instructions

  1. Thaw tiger shrimps, if frozen, rinse and pat dry with paper towels. Push onto wooden or metal skewers (pierce shrimp through middle sections), putting five or six shrimps on each skewer. This step can be done several hours before grilling, covered and chilled until ready to grill.
  2. Before grilling, mix the olive oil, chili sauce, garlic and spices in a small bowl.
  3. Place shrimp kebobs on hot grill.
  4. Grill 4 to 5 minutes per side, brushing generously with chili sauce mixture, or cook until shrimps are opaque, firm and slightly charred.
Servings: Serves up to 6 adult appetizer portions or 4 adults and a few kids’ portions.

Easy Food Tip:

Tiger shrimps often come in 1-lb. frozen bags, which might seem like too much shrimp for one family. Rather than thawing half the bag, thaw the whole amount. Grill all the shrimp as indicated. Eat what you like and chill the leftovers to add to either to hot or cold pasta or salads over the next couple days.
